My homemade strawberry syrup is so easy to make: boil strawberries (fresh or frozen), sugar, add extract, and that’s it! It comes together within 20 minutes and is the perfect addition to your matcha lattes.

Ingredients

To make strawberry syrup from scratch, you’ll need the following ingredients:

  • You can use either fresh or frozen strawberries for this recipe. I like to quarter mine so they cook faster!
  • Any sugar works well here. I ran out of brown sugar, so I made my homemade brown sugar using molasses and white sugar.
  • Feel free to add vanilla paste or extract to your finished syrup for extra flavor!

How to Make Homemade Strawberry Syrup

Step 1: Bring strawberries, sugar, and water to a boil. Simmer until the mixture is reduced to about half the volume, about 15 minutes.

Step 2: Strain syrup into another container, then stir in vanilla. Feel free to add strained fruit on top of your yogurt, oatmeal, etc.!

Storage

Store strawberry syrup in an airtight container in the fridge for up to one week or freezer for up to three months.

Ingredients 

  • 1 pound (453.59 g) strawberries quartered; can use fresh or frozen (thawed!)
  • ½-¾ cup (100 g) sugar adjust to taste; can use white, brown, muscovado, etc.!
  • ¼ cup (59.15 g) water
  • 1 tablespoon (13 g) vanilla paste or extract

Instructions 

  • In a medium saucepan, stir together 1 pound (453.59 g) strawberries, ½-¾ cup (100 g) sugar, and ¼ cup (59.15 g) water. Bring to a boil.
  • Reduce heat and simmer, stirring often, until the mixture is reduced by about half, about 15 minutes.
  • Strain the syrup into a heat-safe container. Stir in 1 tablespoon (13 g) vanilla.
  • Let cool to room temperature. If it's too thick, add a splash of water. Enjoy!
  • Add strained fruit to your oatmeal or yogurt!
