❤️ Why You’ll Love This Recipe
- You won’t need any special equipment. Most of the time, I make brown sugar by mixing with a gloved hand! But, if you’re making a large batch, I recommend using a stand mixer and letting it run for a few minutes.
- It’s a little cheaper than buying brown sugar. One jar of molasses can make about about 10 lbs of brown sugar!!!
- Less clumps! I love making fresh brown sugar because it isn’t as clumpy as store-bought brown sugar that’s been sitting out on the shelf for months/years. It mixes into my recipes much easier!

💡 Tip
- For smaller batches, I like to use gloved hands to mix the molasses into the sugar. I find using a mixer can take a little longer to get rid of all the clumps.
- For larger batches, I prefer mixing the ingredients in a stand mixer fitted with a whisk or paddle attachment. I let it run on medium speed for a few minutes until it’s thoroughly combined.
- Make sure to scrape the sides of your bowl! Try to get all the bits of molasses mixed into the white sugar.
How to Make Brown Sugar
Step 1: In a bowl, add your white sugar and molasses. If you want dark brown sugar, add more molasses.
Step 2: Mix together until fully combined, and enjoy!

How To Make Brown Sugar (Light AND Dark!)

Ingredients
For light brown sugar:
- 1 cup (200 g) granulated sugar
- 1 tablespoon (20 g) molasses
For dark brown sugar:
- 1 cup (200 g) granulated sugar
- 2 tablespoons (40 g) molasses
Instructions
- Note: For smaller batches, I like to mix using a gloved hands to ensure all lumps are gone. For larger batches, I prefer to use a stand mixer fitted with a paddle or whisk attachment, and letting it run on medium speed for a couple of minutes.
For light brown sugar:
- In a medium mixing bowl, add 1 cup granulated sugar and 1 tablespoon molasses. Mix until well combined, making sure to scrape the bottom and sides of the bowl.
For dark brown sugar:
- In a medium mixing bowl, add 1 cup granulated sugar and 2 tablespoons molasses. Mix until well combined, making sure to scrape the bottom and sides of the bowl.
Storage:
- Keep in an airtight container at room temperature for up to 1 year. I like to add a slice of bread or a terracotta brown sugar keeper to prevent the sugar from hardening.
