❤️ Why You’ll Love This Recipe

  • You won’t need any special equipment. Most of the time, I make brown sugar by mixing with a gloved hand! But, if you’re making a large batch, I recommend using a stand mixer and letting it run for a few minutes.
  • It’s a little cheaper than buying brown sugar. One jar of molasses can make about about 10 lbs of brown sugar!!!
  • Less clumps! I love making fresh brown sugar because it isn’t as clumpy as store-bought brown sugar that’s been sitting out on the shelf for months/years. It mixes into my recipes much easier!

Ingredients

To make light or dark brown sugar from scratch, you’ll need the following ingredients:

  • All you’ll need is granulated sugar and molasses! There is a specific ratio for light and dark brown sugar, but the gist is, the more molasses, the darker your brown sugar will be.

💡 Tip

  • For smaller batches, I like to use gloved hands to mix the molasses into the sugar. I find using a mixer can take a little longer to get rid of all the clumps.
  • For larger batches, I prefer mixing the ingredients in a stand mixer fitted with a whisk or paddle attachment. I let it run on medium speed for a few minutes until it’s thoroughly combined.
  • Make sure to scrape the sides of your bowl! Try to get all the bits of molasses mixed into the white sugar.

How to Make Brown Sugar

Step 1: In a bowl, add your white sugar and molasses. If you want dark brown sugar, add more molasses.

Storage

Store homemade brown sugar in an airtight container at room temperature for up to 1 year. I like to add a slice of bread or a terracotta brown sugar keeper to prevent the sugar from hardening.

Ingredients 

For light brown sugar:

  • 1 cup (200 g) granulated sugar
  • 1 tablespoon (20 g) molasses

For dark brown sugar:

  • 1 cup (200 g) granulated sugar
  • 2 tablespoons (40 g) molasses

Instructions 

  • Note: For smaller batches, I like to mix using a gloved hands to ensure all lumps are gone. For larger batches, I prefer to use a stand mixer fitted with a paddle or whisk attachment, and letting it run on medium speed for a couple of minutes.

For light brown sugar:

  • In a medium mixing bowl, add 1 cup granulated sugar and 1 tablespoon molasses. Mix until well combined, making sure to scrape the bottom and sides of the bowl.

For dark brown sugar:

  • In a medium mixing bowl, add 1 cup granulated sugar and 2 tablespoons molasses. Mix until well combined, making sure to scrape the bottom and sides of the bowl.

Storage:

  • Keep in an airtight container at room temperature for up to 1 year. I like to add a slice of bread or a terracotta brown sugar keeper to prevent the sugar from hardening.
