Looking to make light or dark brown sugar in a pinch? I got you! All you'll need are two ingredients (granulated sugar, molasses) and less than five minutes!
Note: For smaller batches, I like to mix using a gloved hands to ensure all lumps are gone. For larger batches, I prefer to use a stand mixer fitted with a paddle or whisk attachment, and letting it run on medium speed for a couple of minutes.
For light brown sugar:
In a medium mixing bowl, add 1 cup granulated sugar and 1 tablespoon molasses. Mix until well combined, making sure to scrape the bottom and sides of the bowl.
For dark brown sugar:
In a medium mixing bowl, add 1 cup granulated sugar and 2 tablespoons molasses. Mix until well combined, making sure to scrape the bottom and sides of the bowl.
Storage:
Keep in an airtight container at room temperature for up to 1 year. I like to add a slice of bread or a terracotta brown sugar keeper to prevent the sugar from hardening.
