This purple drink is perfect any ube lovers out there! The latte has both ube extract and halaya in it, which is then topped with a simple, light, and fluffy ube cold foam.

For the ube latte:
2tablespoonshot water
2tablespoonsube halaya(homemade or store-bought)
¼teaspoonube extractadjust to taste

1teaspooninstant espresso powder
1-2tablespoonssweetened condensed milk
ice
½cupmilkdairy or plant-based, I used coconut!

For the ube latte:
In a small bowl, stir 2 tablespoons hot water, 2 tablespoons ube halaya, and ¼ teaspoon ube extract with a spoon until smooth.
In another small bowl, use frother to mix 2 tablespoons hot water and 1 teaspoon instant espresso powder until fluffy.
Using a spoon, smear 1-2 tablespoons sweetened condensed milk on the inside of your serving cup.
Add ice and ½ cup milk to mug. Top with ube mixture and espresso. Taste and add 1-2 teaspoons sweetener if desired.
For the ube cold foam:
In a small bowl, combine 3 tablespoons heavy cream, 1 tablespoon milk, and ¼ teaspoon ube extract. Use frother to blend until light and fluffy. Mix in 1-2 teaspoon sweetener, adjusting to taste.
Top ube latte with ube cold foam and enjoy!
