Make this easy brown sugar simple syrup in under 5 minutes! Want it sweeter and thicker? I’ve included two sugar-to-water ratio options so you can make it just the way you like.Stir a few teaspoons into your matcha lattes, coffees, lemonades, or cocktails.
Note: For a lighter sweetness and thinner consistency, opt for the 1:1 Standard Ratio. For a richer sweetness and thicker consistency, opt for the 2:1 Rich Syrup.
Combine sugar and water in a medium pot over medium-low heat. Stir occasionally, keeping the mixture just below a simmer. Once the sugar has fully dissolved (about 5 minutes), take pot off the heat.
Transfer brown sugar syrup into a clean bottle and let completely cool. Enjoy!

Notes
Storage: Store in airtight container in the fridge. If making a 1:1 simple syrup, it will last 2-3 weeks. If making a 2:1 simple syrup, it will last up to 4-6 weeks due to the higher sugar content.
Variations and substitutions:
Fresh spices: Add fresh spices along with the water and brown sugar. Some simple options include 1-2 inch knobs of fresh ginger, a scraped vanilla bean pod, a cinnamon stick, or a few cardamom seeds! Once the sugar dissolves, remove from heat and let the flavors steep for 30 minutes. Strain the syrup into your storage container.
Extracts: Once the brown sugar is dissolved, remove from heat, let simple syrup slightly cool, then stir in extract. If you're going with a basic vanilla flavor, add 1 teaspoon of extract. If using a stronger flavor like almond, maple, butter, coconut, hazelnut, etc., try 1/4 teaspoon first, then work your way up.
