Preheat oven to 400°F/204°C and line one baking tray with parchment paper.
Add 2 tbsp granulated sugar to small bowl. Beat 1 egg in another small bowl with hand whisk or fork to make the egg wash.
Using your rolling pin, gently roll out 1 puff pastry sheet on lightly floured work surface to minimize any cracks.
Use knife to cut sheet into 8 equal rectangles. Or, use heart cookie cutter to cut out 8 hearts. Place 4 on baking sheet, about 3-4 inches apart. Set remaining pieces aside.
On each cut out piece on the baking tray, spread ½ tbsp ube halaya, about ¼-inch from the border. Add a slice of cheddar cheese in the middle, then top with another ½ tbsp ube halaya.
Egg wash the sides of the pastry, then top with cut out pastry. Seal edges completely shut with fingers, then use a fork to crimp the edges.
Egg wash the top of the pastry and sprinkle granulated sugar on top. Use a knife to score 2-3 slits on the top. This allows steam to escape while baking.
Bake for 12-15 minutes or until puff pastry is golden. Let cool on pan for about 5 minutes, then transfer to wire rack to cool until ready to eat!

Store ube danishes in an airtight container in the fridge for up to 3 days.
Feel free to use an air fryer instead! Just decrease the time by a few minutes and check them more frequently.
