Adorable & healthy matcha pancakes stuffed with bananas! They're a fun treat to make with friends and kids on a slow weekend morning. Enjoy with a cup of coffee or even as mini pancake cereal!
1 cupoat flourcan use all-purpose, whole wheat, or mochiko too!
½ - 1 ½tablespoon matcha powderadjust to taste
1 ½teaspoonbaking powder

Wet ingredients:
2-3tablespoonbrown sugarhoney, or maple syrup to taste
1egg
1tablespoon vanilla
¾cupmilk of choice

1tablespoon milk chocolatemelted
½tablespoon white chocolatemelted

For the matcha pancake batter:
In a large bowl, whisk together the egg, sugar, and vanilla until smooth.
Mix in the milk until combined.
Sift in the dry ingredients. Whisk batter until no dry spots remain. If the batter is too thick, add a splash of milk. If the batter is too thin, sift in a little more flour.
Fold in sliced bananas until coated in batter.
Cooking the mini pancake bites:
Heat a large pan on low-medium heat and add cooking spray or butter.
Add one banana pancake to the pan at a time. Spoon two dollops of batter on the sides of the banana for the frog's eyes. Work with a few banana pancakes at a time.
Cook pancakes for 2-3 minutes each side, or until golden brown.
Transfer to a cooling rack and repeat for remaining banana pancakes. You can also keep the finished pancakes on a lined sheet pan in a warm oven.
For the frog faces:
Use a toothpick or piping bag to draw on the faces with melted milk chocolate.
Add oil-based pink food coloring to the melted white chocolate. If you don't have oil-based food coloring, then the chocolate will seize/become lumpy. To counter this, stir in a tsp of neutral oil (canola, vegetable) at a time, until it becomes smooth again.
Add blush with the pink white chocolate.
For serving:
Since the pancakes might be a little cold after taking time to decorate them, you can reheat them in the microwave or on a sheet pan in the oven! Bake at 350°F/177°C for 3-5 minutes until warm.
Add warm pancake bites to a plate. Drizzle with maple syrup or honey, or dust on cinnamon or powdered sugar!
